Friday Food: Peach Cobbler Recipe with a Twist

I heard myself saying this week, “I can’t wait until I can retire from cooking.”

I foresee twenty more years or so before retirement.

But there are moments when it’s fun–usually when I find a new recipe or give a surprise twist to an old one. That’s what I did last weekend. It was such a hit at my house, I thought I’d shake my Friday post up this week and share this treat.

I modified this recipe from myrecipes.com. for a peach cobbler.

Ingredients for my Peach, Blueberry, and Raspberry Cobbler Delight

1 stick of butter

1 cup of flour

1/2 cup granulated sugar

1/2 cup brown sugar

1 tablespoon of baking powder

Pinch of salt

1 cup of milk

4 cups of fresh peaches

1/2 cup of fresh raspberries

1/2 cup of blueberries

1 tablespoon of lemon juice

Ground cinnamon

 

Preparation:

Melt butter in 13×9-inch baking pan

Combine flour, granulated sugar, baking powder, salt and cinnamon. Mix. Add milk and stir until dry ingredients in moist.

Pour batter evenly in melted butter. Don’t stir.

Bring brown sugar, fruit, and lemon juice to a boil over high heat, stirring constantly; pour evenly over batter. Don’t stir.

Bake at 375 degrees for 40 to 45 minutes.

Must eat with vanilla ice cream. (smile)
